With a zesty kick of lemon, a hint of briny capers, and a sprinkle of fresh herbs, every bite is a burst of creamy, savoury delight. Ready in minutes, but sure to impress!

Ingredients:
  • 6 mini croissants (or 3 large croissants, halved)
  • 200g smoked salmon pâté
  • 2 tbsp crème fraîche
  • 1 tsp lemon zest
  • 1 tbsp finely chopped chives
  • 1 tbsp finely chopped capers
  • ½ tsp black pepper
  • 1 small spring onion, finely chopped
  • Optional: A few sprigs of fresh dill for garnish
Method:
  1. Prepare the filling: In a bowl, mix the smoked salmon pâté with crème fraîche, lemon zest, chopped chives, capers, black pepper, and spring onion. Stir until well combined and creamy.
  2. Prepare the croissants: If using mini croissants, slice them open but don’t cut all the way through—leave them hinged. For larger croissants, halve them.
  3. Stuff the croissants: Spoon generous portions of the salmon pâté mixture into each croissant, ensuring an even filling.
  4. Garnish: Top with a small sprig of dill for an elegant finish.
  5. Serve immediately as a brunch dish, canapé, or light lunch.

Tip:
For an extra touch, lightly warm the croissants under the grill before filling them for a warm and crispy bite.
