SMOKED SALMON & AVOCADO BLINIS

Ingredients:
  • Blinis (small pancakes):
    • 100g plain flour
    • 1 tsp baking powder
    • 1 large egg
    • 150ml whole milk
    • Pinch of salt
    • Butter (for frying)

  • Toppings:
    • 100g smoked salmon, thinly sliced
    • 100g cream cheese (like Philadelphia)
    • 1 ripe avocado, sliced or diced
    • 1 tbsp lemon juice (for drizzling on avocado)
    • Fresh dill (for garnish)
    • Black pepper (to taste)
Instructions:
  1. Prepare the Blinis:
    • In a bowl, sift together the flour, baking powder, and salt.
    • Whisk the egg and milk together, then slowly add to the dry ingredients, whisking until smooth.
    • Heat a non-stick frying pan over medium heat and add a little butter. Pour small amounts of batter (about a tablespoon) to form mini pancakes. Cook for about 1-2 minutes on each side, until golden. Set aside to cool.

  2. Prepare the Toppings:
    • Cut the avocado into small slices or chunks and drizzle with lemon juice to prevent browning.
    • Spread a small amount of cream cheese on each cooled blini.
    • Top with a slice of smoked salmon and a piece of avocado.

  3. Garnish and Serve:
    • Sprinkle with fresh dill and a crack of black pepper.
