  • Total Time: 40 minutes
  • Serves: 1-2

Ingredients:

  • 200g Goldstein smoked salmon slices
  • 1 x medium cucumber
  • 250g sushi rice
  • 100g cream cheese
  • 4 nori (dried seaweed) sheets
  • 1 x tablespoon soy sauce
  • 1 x tablespoon rice vinegar
  • 1 x teaspoon sugar
  • 1 x teaspoon wasabi paste (optional)
  • 1 x Pickled ginger (optional, for serving)
  • 1 x Soy sauce (for dipping)
  • 1 x Sushi rolling mat (optional)
  • 1 x Plastic wrap (if not using a sushi mat)

Instructions:

1. Prepare the Sushi Rice:

  • Cook the sushi rice according to the package instructions (~20 mins)
  • Once cooked, allow the rice to cool to room temperature.
  • Mix the rice vinegar and sugar into the rice, stirring gently to combine. Set aside.

2. Prepare the Cucumber:

  • Wash and peel the cucumber.
  • Cut the cucumber into thin strips, about 1/4 inch thick and 4-5 inches long.

3. Prepare the Cream Cheese:

  • Let the cream cheese soften at room temperature for about 15 minutes.

    4. Prepare the Nori Sheets:

    • Cut the nori sheets in half if they are too large for your rolls.

    5. Assemble the Rolls:

    • Spread a thin layer of sushi rice onto the plastic wrap, pressing gently to ensure it sticks.
    • Place a nori sheet on the sushi rice
    • Spread a thin layer of the cream cheese over the rice.
    • Place a few cucumber strips horizontally across one end of the nori sheet.

    6. Roll the Sushi:

    • Using the plastic wrap or sushi mat, gently roll the nori, sushi rice, cream cheese, and cucumber, creating a tight roll.
    • Use the plastic wrap to help shape the roll and keep it together.

    7. Add Goldstein Smoked Salmon:

    • After rolling the sushi but before slicing, place a slice of Goldstein salmon on top of one side of the roll.

    8. Slice the Rolls:

    • Once rolled, carefully slice the roll into bite-sized pieces, about 1 inch thick.
    • Use a sharp knife, wiping it with a damp cloth between cuts to keep the slices clean and neat.

    9. Serve:

    • Arrange the sushi rolls on a serving platter.
    • Serve with soy sauce for dipping, pickled ginger, and wasabi paste if desired.

    Tips:

    • Chill the rolls in the refrigerator for about 10-15 minutes before slicing to make them easier to cut.
    • Adjust the cream cheese mixture to taste, adding more or less vinegar and sugar as desired.
    • Experiment with fillings: You can add avocado slices, bell pepper strips, or other vegetables for variety.
