Oven Roasted Salmon with Lemon, Dill & Asparagus

Simple, elegant and full of flavour, this oven roasted salmon is perfect for the Passover table or a light spring supper. Fresh salmon is gently roasted with lemon, dill and a touch of chilli, then served with asparagus, crispy potatoes and a cooling dill yoghurt sauce.

Ingredients

Salmon & Vegetables

  • 2 Goldstein fresh salmon fillets

  • 200g asparagus, trimmed

  • 400g baby potatoes, cut into wedges

  • 2 tbsp olive oil

  • 1 lemon, half sliced and half for juice

  • 1 tbsp fresh dill, chopped

  • ½ tsp chilli flakes

  • sea salt

  • freshly ground black pepper

Dill Yoghurt Sauce

  • 4 tbsp Greek yoghurt or crème fraîche

  • 1 tsp lemon juice

  • 1 tsp fresh dill, finely chopped

  • pinch salt

  • pinch black pepper


Method

1. Roast the potatoes

Preheat the oven to 200°C (180°C fan).

Place the potato wedges on a tray, drizzle with olive oil and season with salt and pepper. Roast for 20 minutes until starting to turn golden.


2. Add the asparagus

Add the asparagus to the tray with the potatoes, drizzle with a little olive oil and return to the oven for 5 minutes.


3. Prepare the salmon

Place the salmon fillets on a lined baking tray. Drizzle with olive oil and lemon juice.

Season with salt, pepper and chilli flakes, then sprinkle over the fresh dill and add a few slices of lemon.


4. Roast the salmon

Roast the salmon for 10–12 minutes, depending on thickness, until just cooked and flaky.


5. Make the sauce

While the salmon cooks, mix the Greek yoghurt, lemon juice, dill, salt and pepper in a small bowl.


6. Serve

Serve the roasted salmon with asparagus and crispy potatoes, with the dill yoghurt sauce on the side.

Finish with an extra sprinkle of dill and a squeeze of lemon.

This dish pairs beautifully with a simple cucumber and herb salad or lightly dressed greens for a fresh and balanced meal.

For perfectly moist salmon, avoid overcooking. The fish should be just opaque in the centre and will continue to cook slightly after being removed from the oven.
