True, my preference is for the excellent dry version of Goldstein's esteemed smoked salmon, but this intermediate purchase of trimmings has disappointed me. Excessive white stuff, presumably the underside of the skin and an excess of oil. I'll stick to the tried and tested in future.

Very strong flavour. Different from the sliced salmon which is far more flavoursome and subtle.
